Spiced Sweet Potato-Snickerdoodle Milkshake

3/4 cup mashed cooked North Carolina Sweet Potato
1 1/2 cups low-fat vanilla ice cream or frozen yogurt
1 cup skim milk
1 cup coarsely chopped snickerdoodle cookies
1/4 cup chopped walnuts
1/2 teaspoon ground cinnamon
Whipped cream, for topping (preferably lower in fat)
Cinnamon-sugar, for topping

In a blender, combine sweet potato, ice cream, milk, cookie, walnuts (save a few walnut pieces for topping) and cinnamon and blend until well combined and smooth.

Pour into two glasses and top with whipped cream. Sprinkle with walnut pieces and cinnamon sugar.

Makes 2 milkshakes

  11. Ah I love anything with sweet potatoes in it! I don't know what North Carolina sweet potatoes are, but I'd guess that they're just as delicious as the ones we eat up north. Can't wait to try this!

  12. Yeah at the last concert I went to, the people sitting next to me were practically injecting heroin. I tried to avert my eyes so that I couldn't testify in court...but I swear that's what it seemed like. :P

  19. This sounds very interesting. But it looks awesome! I do LOVE snickerdoodles. And I enjoy sweet potatoes. But I don't know about in a shake. Is the sweet potato flavor very noticeable?? I'm extremely interested in trying this. Thanks for sharing!
