Raspberry Lemon Cheesecake
1/2 cups ground amaretti cookies
1/4 cup unsalted butter, melted
2 1/2 (8 ounce) packages cream cheese, softened
1 cup granulated sugar
2 teaspoons vanilla extract
1/2 cup heavy cream
6 egg yolks
1/2 cup lemon curd
1 half pint Driscoll raspberries
Heat oven to 325 degrees F.
In a large bowl, mix together cookie crumbs and melted butter until well combined. Press into the bottom of a 10-inch springform pan. Bake 10 minutes or until golden and crisp.
In a large mixing bowl, using a mixer on medium speed, beat together cream cheese and sugar until fluffy - about 1 minute. Beat in vanilla and cream until combined. Beat in egg yolks until well combined - about 2 minutes. Pour batter over prepared crust. Swirl lemon curd throughout cheesecake batter. Bake 1 hour and 10 minutes, or until light golden brown around edges, and no longer wobbly. Turn off oven and allow cheesecake to cool in oven for 10 minutes. Remove pan from oven and cool 1 hour. Cover and refrigerate for 4 hours or until ready to serve.

ReplyDeleteMy favorite berry is the blackberry! When I lived in MI there was a blackberry bush and I used to climb as high as I could to pick them.
Blueberry...ever since I was a kid and loved to get blueberry muffins from Mrs. Field's at the mall.
ReplyDeleteMy favorite berries are blackberries! This may have something to do with tradition, not necessarily flavor. When I was a kid I used to spend summers with my grandparents, and even though it was getting hot in the mornings, my grandma and I would go out to the field wearing long sleeves, gloves, jeans and boots to pick blackberries (no getting pricked!) and then the minute we got back, I'd wash a few and eat them in a little bowl with some sugar. :)

ReplyDeleteMy favorite berry is the one you pick off the vine & is still warm, almost hot, from lazing in the sunshine ripening up & getting delicious. That isn't what you meant though is it? lol I guess I love strawberries best but raspberries are a very close 2nd.

ReplyDeleteYou can't go past strawberries. We grow them in our garden each year and I have to fight my children to get some! My 4 year old would live on fresh chopped strawberries mixed with vanilla yoghurt and granola if I let him!

ReplyDeleteCheesecake isn't my favorite dessert either. I never liked desserts that are sour. Desserts shouldn't be sour. They should be creamy and sweet. (That's why I think froyo is an abomination and ice cream should always be eaten in its place.) I have softened my stance a bit because flavored cheesecakes like rich chocolate ones - well they're not so bad.

ReplyDeleteSpreading the word of SugarPlum....told my pal Jessie at work about you and this blog...he kinda reminds me of you...FABOOSH baker, very smart guy, etc..anyway, gave him your blog address and LOW and BEHOLD...everyday we've been treated to "recipes insipired by SP". Today was a superb big, fat chocolate cake...moist, chocately, and fat cake with a most desirable peanut butter, heavy cream frosting. Yesterday, he was inspired by your peppermint section and came in with a giant sized again---big, fat, moist an chocolately--he called them brownies--mine never look that way tho-- with a yummy peppermint/ganache (sp?) frosting. I ate soo much of that, I was nauseated....but in a good way! HAHAHA. so, the moral of this little story is...i'm a very proud auntie that will still tell anyone i can get to stand still long enough about my super, great, intelligent, beautiful neice! happy baking!! be in touch! xxoo your #1 fan carol

Raspberries all the way. They're very playful, you can stick them on your fingertips and the seeds sort of pop when you eat them. Mmmmmm! Cheesecake isn't my go-to dessert either but I do make a pretty phenom white chocolate and raspberry cheesecake. With fresh raspberries on top of course!

ReplyDeleteI love blackberries. My aunt and uncle used to have blackberry bushes at their house in Berkeley, and my sister and I would go outside and just chomp on them, not knowing what they were. But I never buy them now because they are too expensive.

ReplyDeleteI hate to admit it, but I'm not a big fan of Driscoll's. The fruit always looks good, so it's tempting to buy it. I don't find a lot of flavor in it, though, and it doesn't seem to make much difference whether it's in season or not. So unless I'm looking for a few pieces to make a pretty garnish, I use frozen fruit in the winter (as long as everything's getting cooked anyway) and look forward to the fresh and local fruit in the summer. I have to admit I kind of like the idea that strawberries come out in May and June only!
