on

Strawberry Scones1Hello!  I hope everyone out there is doing well and enjoying their summer.  I wanted to pop in and tell you I’m still alive and okay.  I’m honestly not sure about the future of this blog.  I’ve thought about starting a new blog, maybe continuing this one, or stopping all together.  I’m not sure what’s the right choice. I gotta ponder and do some soul searching, I suppose.  My heart is just not into blogging these days.

Anyway, here’s a recipe I made a lonnng time ago; three months ago seems like three years ago.  I haven’t created any new recipes since then.  This one was too good to go to waste!  These are yummy Strawberry White Chocolate Coconut Scones.
Strawberry Scones3 They’re pretty gorgeous.  They’re made with butter, coconut milk, sweetened flake coconut, white chocolate chips and fresh strawberries.  Now is the time to be eating all of those delicious berries since they’re in season!  I really love the combo of coconut and strawberries.  I wonder if you could substitute coconut oil for some of the butter?  Just an idea.  Take care and thanks for stopping by!

Love, Me.
Strawberry Scones2 Strawberry White Chocolate Coconut Scones

2 1/4 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup granulated sugar
1/2 cup cold unsalted butter, cut into small pieces
1/2 cup sweetened flaked coconut
1/2 cup white chocolate chips
1 large egg
1/3 cup coconut milk
1/2 teaspoon vanilla extract
Thinly sliced strawberries

Heat oven to 375 degrees F.

In a large mixing bowl, sift together flour, baking powder and salt.  Whisk in sugar until combined.  Work in butter, using a pastry blender or two forks, until well incorporated and mealy.  Stir in coconut and white chocolate chips until combined.

In a small bowl, whisk together egg, coconut milk and vanilla until well combined.  Make a "well" in the center of dry ingredients and pour the liquid mixture into the center.  Gently stir everything together until just combined.

Pat the dough into a 1 1/2-inch thick round on a cookie sheet.  Slice into 8 triangles and space evenly on cookie sheet.  Top with sliced strawberries.  Sprinkle tops of scones with sugar, if desired.
Bake scones 20-25 minutes, or until golden brown.  Cool 2 minutes before transferring to wire racks.

Coconut Macaroon Cinnamon Rolls

Ingredients:
1 1/4 cups warm (not hot) coconut milk
1 packet fast rising yeast
1/3 cup granulated sugar
2 tablespoons unsalted butter, softened or non-dairy butter spread
1 teaspoon vanilla extract
1/4 teaspoon salt
4 1/4 cups all purpose flour
2/3 cup brown sugar
1/4 cup unsalted butter, softened or non-dairy butter spread
2 tablespoons unsweetened dark cocoa powder
2 teaspoons ground cinnamon

Glaze
1 cup confectioners' sugar
2 tablespoons coconut milk
1/2 teaspoon vanilla extract
1/3 cup sweetened flaked coconut
1/4 cup toasted sliced almonds
3 tablespoons finely chopped dark chocolate

Instructions:
In a large mixing bowl, stir together coconut milk, yeast, granulated sugar, 2 tablespoons butter, vanilla, salt and flour until just combined.  Using a dough hook on a mixer, on medium speed, mix for 4-6 minutes, or until dough forms a ball and is smooth and elastic.  Cover dough with a towel or plastic wrap, and allow to rise in a warm area, until doubled in bulk - about 1 hour.

Roll out dough thinly on a floured work surface, into a 20x14 inch rectangle.  In a small bowl, stir together brown sugar, 1/4 cup butter, cocoa powder and cinnamon until well combined; spread mixture all over rolled out dough.  Roll up dough, jelly roll style, until you have a big log.  Slice into equal portions and place on a greased cookie sheet.  Cover with a towel and allow to rise for 30 minutes or until doubled in bulk.

Heat oven to 350 degrees F.  Bake cinnamon rolls for 20-25 minutes, or until light golden brown.  Cool on a wire rack for 15 minutes.

To make the glaze, sift confectioners' sugar into a medium sized bowl; whisk in coconut milk and vanilla until well combined.

Drizzle glaze on top of cinnamon rolls.  Sprinkle with coconut, almonds and chocolate.

Carmelita Tres Leches Cake

Tres4
Hi there! It's been a while, hasn't it? I attempted to blog the other day, but I just wasn't feeling it. So I unplugged from the blog, Facebook and Twitter for a few days. I need to do that more often. Then I tried to blog earlier today, and decided I'd rather go shopping. And so I did. For art, pillows, tablecloths, vases and lighting.

Anyway, this past week has been full of shopping, fishing trips (I caught eight fish!), birthday parties and new nephews.

tres1

I baked this cake a while back... I think for my sister's birthday? It's delicious! It's a chocolate tres leches cake. It's a basic chocolate cake made from cocoa powder and melted chocolate chips, baked in a 13x9-inch pan.

After baking, the cake is poked with a wooden skewer, and sweetened condensed milk, evaporated milk, and coconut rum is poured into the holes. Did I catch your attention with the coconut rum? Yes, I know, I love coconut rum, too.

tres3

The milks make the cake extra moist. Chilling the cake in the refrigerator allows the cake to soak up all of that moisture. Whipped cream sweetened with dulce de leche and cinnamon is spread on top of the cake, and sprinkled with toasted coconut.

Amazing. My only criticism is I think I would have liked more chocolate in the cake. So feel free to bump up the amount of cocoa powder or chocolate chips if you decide to make this. You can never, never have enough chocolate.

tres2

Carmelita Tres Leches Cake

4 large eggs, separated
1/4 teaspoon cream of tartar
3/4 cup granulated sugar, divided use
6 tablespoons unsalted butter, softened
1 teaspoon vanilla extract
3 tablespoons unsweetened cocoa powder
1 cup semi-sweet chocolate chips, melted
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup heavy whipping cream
1 cup cake flour

1 cup sweetened condensed milk
3/4 cup evaporated milk
1 tablespoon coconut rum

1 3/4 cups heavy whipping cream
1/2 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/3 cup caramel sauce or dulce de leche
1/3 cup sweetened flaked coconut, toasted

Heat oven to 350 degrees F. Coat a 13x9-inch glass baking dish with cooking spray.

In a large mixing bowl, using a mixer on high speed, beat egg white and cream of tartar until soft peaks form; add 1/4 cup sugar, and beat until stiff peaks form.

In an additional large mixing bowl, beat together butter and remaining 1/2 cup sugar until creamy. Beat in egg yolks, 1 teaspoon vanilla, baking powder and salt until combined. Beat in cocoa powder and melted chocolate until well combined. Reduce mixer speed to low and beat in 1/4 cup cream and flour until JUST combined. Fold in egg whites until just combined. Place batter into prepared baking dish.

Bake 30-35 minutes or until well risen and no longer wobbly. Cool 10 minutes on a wire rack. Stir together sweetened condensed milk, evaporated milk and rum in a liquid measuring cup. Poke holes all over cake using a wooden skewer. Pour half of milk mixture all over top of cake. Wait 1 minute to allow the milks to soak in. Pour the remaining milk on top. Chill cake for 1 hour before spreading whipped cream on top.

To make the whipped cream, in a large mixing bowl, using a mixer on high speed, beat together 1 3/4 cups heavy cream, vanilla and cinnamon until stiff peaks form. Beat in caramel syrup until well combined. Spread caramel whipped cream on top of cake. Process coconut in a food processor until finely ground; sprinkle coconut crumbs on top of whipped cream.

Cover and chill overnight.
